As chef Shun Sato’s first personal project, Censu is a contemporary Japanese restaurant that serves up exquisite cuisine that also embodies influences from the UK and Australia.
Drawing on years of restaurant experience in Japan, Australia and London, chef Shun Sato started Censu in Hong Kong. Inspired by childhood flavours and memories of his father’s izakaya, Censu’s offerings are an elevated take on traditional Japanese cuisine, designed to engage diners’ senses. The restaurant interiors are inspired by Sato’s grandmother’s house, invoking a comfortable, home-like ambience that embraces the Japanese concept of Wabi-sabi.
