Bringing agave spirits to Hong Kong’s cocktail scene, COA is a Mexican-inspired bar that is cosy and intimate. They definitely get full marks for ambience, with beautifully hand-drawn murals of goddesses and mythical creatures, as well as a real coa tool from Oaxaca. The bar boasts a hefty 41-page spirit menu dedicated to just agave, offering a glimpse of not only the extensive flavours of the alcohol but also the rich history of a foreign drinking culture. Their signature La Paloma de Oaxaca cocktail, made with tequila blanco, mezcal joven, lime, grapefruit soda and worm salt, encompasses this diversity perfectly. While it specialises in tequila and mezcal, COA boasts a wide range of other Mexican spirits, such as Raicilla, Bacanora, Sotol and Charanda.
