The quintessential "dim sum" - literally meaning "touch the heart" - makes dining in Hong Kong an adventure in itself. These light snacks are served for breakfast or lunch in local teahouses as well as fine Chinese restaurants.

The four different kinds of dim sum featured in this competition epitomise the general families on offer here. The shrimp dumpling (ha gau) and barbecued pork bun (cha siu bau), both prepared by steaming, are made with diametrically different fillings and wrapping ingredients that create their distinctive tastes and unique textures. The egg tart and spring roll, on the other hand, display an even sharper distinction in cooking style. The egg tart calls for perfect baking skills to produce the smoothest golden custard enveloped by a crust of puff pastry, whereas the spring roll requires deep-frying in the hottest oil to produce a crispy exterior while retaining the juices within.

Altogether the Chinese petit fours make the best test of a chef's skills in steaming, frying and baking, not to mention his artistry in creating dainty culinary masterpieces to "touch the heart" of diners.
